Ingredients

  • 1.5 cups cooked farro
  • 3 cups butternut squash, cubed
  • 4 cups kale, chopped
  • 0.33 cup tahini
  • 2 tablespoons maple syrup
  • 1 lemon, juiced
  • 0.33 cup dried cranberries
  • 0.25 cup toasted pecans

Method

  1. Roast the butternut squash with oil until caramelized and tender.
  2. Whisk the tahini, maple syrup, and lemon juice into a dressing.
  3. Massage the kale with a little dressing until softened.
  4. Combine the farro, squash, and kale and top with cranberries and pecans.
