Avocado Toast with Poached Egg

Smashed avocado on toasted sourdough crowned with a runny poached egg and chili flakes. Simple, fresh, and endlessly satisfying.

Ingredients

  • 2 thick slices sourdough bread
  • 1 ripe avocado
  • 2 eggs
  • 1 tablespoon white vinegar
  • 1 lemon, juiced
  • 0.5 teaspoon chili flakes
  • 1 teaspoon flaky sea salt
  • 1 tablespoon olive oil

Method

  1. Toast the sourdough until deeply golden and crisp.
  2. Mash the avocado with lemon juice and salt and spread over the toast.
  3. Poach the eggs in simmering water with vinegar for three minutes.
  4. Set a poached egg on each toast and finish with chili flakes and olive oil.
