Skillet Eggs and Bacon

Ingredients

  • 6 slices bacon, chopped
  • 4 eggs
  • 1 cup baby spinach
  • 0.5 cup cherry tomatoes, halved
  • 0.5 teaspoon kosher salt
  • 0.25 teaspoon black pepper
  • 2 green onions, sliced

Method

  1. Cook the chopped bacon in a cast iron skillet until crisp.
  2. Add the tomatoes and spinach and cook until the spinach wilts.
  3. Crack the eggs into the skillet and season with salt and pepper.
  4. Cover and cook until the whites set but the yolks stay runny, then top with green onions.
