Vietnamese Pho Noodle Soup

Ingredients

  • 3 lbs beef bones
  • 0.5 lb beef sirloin, thinly sliced
  • 1 lb rice noodles
  • 3 star anise pods
  • 1 cinnamon stick
  • 1 onion, charred
  • 2 inches ginger, charred
  • 1 bunch Thai basil and cilantro

Method

  1. Char the onion and ginger, then simmer with the beef bones and spices for three hours.
  2. Strain the broth and season with fish sauce and a little sugar.
  3. Soak the rice noodles until tender and divide into bowls with raw sliced beef.
  4. Pour the boiling broth over the beef to cook it and serve with the fresh herbs.
