Ingredients

  • 3 lbs pork trotters and bones
  • 1 lb pork belly
  • 4 portions fresh ramen noodles
  • 4 soft-boiled eggs
  • 4 cloves garlic
  • 2 inches ginger
  • 3 green onions, sliced
  • 3 tablespoons soy tare

Method

  1. Blanch the pork bones, then simmer them hard with garlic and ginger for at least eight hours.
  2. Braise the pork belly separately until tender, then slice into chashu.
  3. Cook the ramen noodles to a firm bite and divide among bowls with the tare.
  4. Ladle the milky broth over the noodles and top with chashu, soft egg, and green onions.
