Blackened Grouper Fillet

Ingredients

  • 4 grouper fillets (6 oz each)
  • 2 tablespoons smoked paprika
  • 1 teaspoon cayenne pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon dried thyme
  • 4 tablespoons butter, melted
  • 1.5 teaspoons kosher salt
  • 1 lemon, wedged

Method

  1. Mix the paprika, cayenne, garlic powder, thyme, and salt into a blackening rub.
  2. Dip each fillet in melted butter, then coat thoroughly in the spice mix.
  3. Sear in a smoking-hot cast iron skillet for three minutes per side until charred.
  4. Serve immediately with lemon wedges for squeezing over the top.
