Salmon over Wilted Spinach

Ingredients

  • 4 salmon fillets (6 oz each)
  • 10 oz fresh spinach
  • 4 cloves garlic, sliced
  • 3 tablespoons olive oil
  • 1 lemon, juiced
  • 2 tablespoons butter
  • 1.5 teaspoons kosher salt
  • 0.5 teaspoon red pepper flakes

Method

  1. Season the salmon and sear in oil until crisp outside and just cooked through.
  2. Remove the salmon and saute the garlic and pepper flakes in butter.
  3. Add the spinach in handfuls and toss until just wilted and bright green.
  4. Finish the spinach with lemon juice and set the salmon on top to serve.
