Classic Tiramisu

Ingredients

  • 24 ladyfinger cookies
  • 16 oz mascarpone cheese
  • 4 egg yolks
  • 0.75 cup sugar
  • 1.5 cups strong espresso, cooled
  • 1 cup heavy cream
  • 2 tablespoons cocoa powder
  • 2 tablespoons coffee liqueur

Method

  1. Whisk the egg yolks and sugar over a double boiler until thick and pale.
  2. Fold in the mascarpone and the whipped cream until smooth.
  3. Dip the ladyfingers in the espresso and liqueur and layer them in a dish.
  4. Spread the cream over the cookies, repeat the layers, and chill before dusting with cocoa.
