Beef Bourguignon

Ingredients

  • 3 lbs beef chuck, cubed
  • 6 oz bacon, diced
  • 1 bottle dry red wine
  • 2 cups beef broth
  • 1 lb pearl onions
  • 1 lb mushrooms, quartered
  • 3 tablespoons tomato paste
  • 3 tablespoons all-purpose flour

Method

  1. Render the bacon, then brown the floured beef in the fat in batches.
  2. Stir in the tomato paste, then add the wine and broth and bring to a simmer.
  3. Braise covered in a 325 degree oven for two and a half hours.
  4. Saute the mushrooms and pearl onions separately and stir them in to finish.
