Hearty Beef Stew

Ingredients

  • 2 lbs beef chuck, cubed
  • 4 carrots, chunked
  • 3 potatoes, cubed
  • 1 onion, diced
  • 4 cups beef broth
  • 2 tablespoons tomato paste
  • 3 tablespoons all-purpose flour
  • 2 sprigs fresh thyme

Method

  1. Dredge the beef in flour and brown it in batches in a heavy pot.
  2. Saute the onion and tomato paste, then return the beef.
  3. Pour in the broth, add the thyme, and bring to a gentle simmer.
  4. Add the carrots and potatoes and simmer until everything is tender, about two hours.
