Ingredients

  • 3 cans cannellini beans
  • 4 cups vegetable broth
  • 4 cups kale, chopped
  • 1 can diced tomatoes
  • 1 onion, diced
  • 4 cloves garlic, minced
  • 3 tablespoons olive oil
  • 1 teaspoon dried rosemary

Method

  1. Saute the onion and garlic in olive oil until soft and fragrant.
  2. Add the tomatoes, rosemary, and broth and bring to a simmer.
  3. Stir in the beans and mash some against the pot to thicken the stew.
  4. Add the kale and simmer until wilted and tender.
