Pork Carnitas Burrito

Ingredients

  • 3 lbs pork shoulder, cubed
  • 1 orange, juiced
  • 4 cloves garlic
  • 2 teaspoons ground cumin
  • 6 large flour tortillas
  • 2 cups cooked rice
  • 2 cups refried beans
  • 1 cup salsa

Method

  1. Simmer the pork with orange juice, garlic, cumin, and water until fork tender.
  2. Spread the pork on a sheet pan and broil until the edges turn crisp and golden.
  3. Warm the tortillas and layer with rice, beans, the carnitas, and salsa.
  4. Fold in the sides and roll tightly into burritos, then sear seam-side down to seal.
