Beef Barbacoa Bowls

Ingredients

  • 3 lbs beef chuck roast
  • 3 chipotle peppers in adobo
  • 4 cloves garlic
  • 0.25 cup lime juice
  • 1 cup beef broth
  • 3 cups cooked rice
  • 2 cups black beans
  • 2 teaspoons ground cumin

Method

  1. Blend the chipotles, garlic, lime juice, cumin, and broth into a smooth braising sauce.
  2. Sear the beef, pour over the sauce, and braise covered at 300 degrees for three hours.
  3. Shred the tender beef with two forks and toss it in the cooking juices.
  4. Build the bowls with rice, beans, the barbacoa, and a squeeze of lime.
