Ingredients

  • 1 tri-tip roast (2.5 lbs)
  • 1 tablespoon garlic powder
  • 1 tablespoon coarse black pepper
  • 1 tablespoon kosher salt
  • 2 teaspoons dried oregano
  • 2 tablespoons olive oil
  • 1 teaspoon onion powder
  • 1 teaspoon smoked paprika

Method

  1. Coat the tri-tip in oil and the dry rub and let it sit for thirty minutes.
  2. Sear over high heat to develop a crust on all sides.
  3. Move to indirect heat and grill until the center reaches 130 degrees.
  4. Rest for ten minutes, then slice thin against the grain.
