Ingredients

  • 1 pork shoulder (7 lbs)
  • 0.25 cup brown sugar
  • 2 tablespoons paprika
  • 1 tablespoon kosher salt
  • 1 cup apple cider vinegar
  • 1 tablespoon red pepper flakes
  • 2 tablespoons yellow mustard
  • 1 tablespoon black pepper

Method

  1. Rub the pork shoulder with the dry rub and let it sit overnight.
  2. Smoke at 250 degrees until the internal temperature reaches 200 degrees.
  3. Rest the pork, then pull it into shreds with two forks.
  4. Toss the pulled pork with a vinegar sauce of cider vinegar and pepper flakes.
