Country Fried Steak

Crispy battered cube steak fried golden and blanketed in creamy black pepper gravy. Southern comfort done right.

Ingredients

  • 4 cube steaks
  • 1.5 cups all-purpose flour
  • 2 eggs, beaten
  • 1 cup buttermilk
  • 2 cups whole milk
  • 1 teaspoon black pepper
  • 0.5 cup vegetable oil
  • 1 teaspoon kosher salt

Method

  1. Dredge each steak in seasoned flour, then in the egg and buttermilk wash, and again in the flour.
  2. Fry the steaks in hot oil for four minutes per side until golden and crisp, then drain on a rack.
  3. Pour off all but two tablespoons of oil and whisk in three tablespoons of the remaining flour.
  4. Stir in the milk and pepper, simmer until thickened, and spoon the gravy over the steaks.
