Classic Diner Cheeseburger

A juicy seared beef patty topped with melted American cheese on a toasted brioche bun. This is the burger that built the diner reputation.

Ingredients

  • 1.5 lbs ground beef chuck (80/20)
  • 4 slices American cheese
  • 4 brioche burger buns
  • 1 teaspoon kosher salt
  • 0.5 teaspoon black pepper
  • 4 leaves green leaf lettuce
  • 1 ripe tomato, sliced
  • 2 tablespoons butter, softened

Method

  1. Divide the beef into four loose balls, season generously with salt and pepper, and press into patties slightly wider than the buns.
  2. Heat a cast iron skillet over high heat and sear the patties for three minutes per side until a deep brown crust forms.
  3. Lay a slice of American cheese on each patty during the last minute and cover the pan to melt it fully.
  4. Toast the buttered buns in the same skillet, then build each burger with lettuce, tomato, and the cheesy patty.
