Ingredients

  • 1 lb penne
  • 0.5 cup vodka
  • 1 cup heavy cream
  • 1.5 cups tomato puree
  • 3 tablespoons tomato paste
  • 1 small onion, finely diced
  • 0.5 cup grated parmesan
  • 0.5 teaspoon red pepper flakes

Method

  1. Saute the onion and tomato paste in oil until deepened in color, about five minutes.
  2. Add the vodka and simmer for two minutes to cook off the raw alcohol.
  3. Stir in the tomato puree and cream, then simmer until the sauce is smooth and rosy.
  4. Toss the cooked penne with the sauce and parmesan, loosening with pasta water as needed.
