Grilled New York Strip

Ingredients

  • 2 New York strip steaks (12 oz each)
  • 2 tablespoons olive oil
  • 1.5 teaspoons kosher salt
  • 1 teaspoon coarse black pepper
  • 3 tablespoons butter
  • 3 cloves garlic, smashed
  • 2 sprigs fresh thyme
  • 1 teaspoon flaky sea salt

Method

  1. Bring the steaks to room temperature, coat with oil, and season heavily with kosher salt and pepper.
  2. Grill over high heat for four minutes per side until well charred and cooked to your liking.
  3. Add butter, garlic, and thyme to a pan and baste the rested steaks with the foaming butter.
  4. Let the steaks rest for five minutes, then slice and finish with a pinch of flaky sea salt.
