Ingredients

  • 1.5 cups all-purpose flour
  • 0.5 cup butter, cold
  • 1 cup sugar
  • 4 eggs
  • 0.66 cup fresh lemon juice
  • 2 tablespoons lemon zest
  • 0.5 cup butter for curd
  • 1 egg yolk

Method

  1. Make the pastry, press into a tart pan, and blind bake until golden.
  2. Whisk the eggs, yolk, sugar, lemon juice, and zest in a saucepan.
  3. Cook gently while stirring until thickened, then whisk in the butter.
  4. Pour the curd into the shell and chill until set.
